Ingredients

The chicken

  • 1 lb boneless skinless chicken breasts

The breading station

  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • ¼ cup milk or water
  • 1 cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • teaspoon black pepper

For cooking and serving

  • ½ cup vegetable oil
  • to taste Italian parsley, chopped
  • to taste lemon circles

Instructions

  1. Pound the chicken breasts between plastic wrap until they are ¼-½ inch thick.
  2. Mix flour, salt, and black pepper in a bowl.
  3. In another bowl, whisk together eggs and milk or water for the egg wash.
  4. In a third bowl, combine panko breadcrumbs, garlic powder, onion powder, and black pepper.
  5. Dredge the chicken in the flour mixture, then dip in the egg wash, and finally coat with breadcrumbs.
  6. Heat vegetable oil in a frying pan over medium-high heat.
  7. Carefully place the breaded chicken cutlets in the hot oil and fry until golden brown, about 2-3 minutes per side.
  8. Remove the chicken from the pan and let it drain on a wire rack or paper towel.
  9. Garnish with chopped parsley and lemon circles before serving.
