Instructions
- Pound the chicken breasts between plastic wrap until they are ¼ inch thick.
- Prepare three shallow bowls: one with flour, salt, and pepper; one with whisked eggs; and one with bread crumbs.
- Dredge each chicken fillet in the flour mixture, then dip in the eggs, and finally coat with breadcrumbs.
- Heat oil in a non-stick pan and fry the chicken for 4 minutes on each side until golden brown.
- Remove the schnitzels and place them on a wire rack to keep them crispy. Serve with lemon wedges.
