Ingredients

The chicken

  • 3 pieces chicken breasts, halved diagonally

The breading

  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup flour
  • 2 large eggs, whisked
  • 1 cup bread crumbs

For frying

  • ¼ cup oil

To serve

  • to taste lemon wedges

Instructions

  1. Pound the chicken breasts between plastic wrap until they are ¼ inch thick.
  2. Prepare three shallow bowls: one with flour, salt, and pepper; one with whisked eggs; and one with bread crumbs.
  3. Dredge each chicken fillet in the flour mixture, then dip in the eggs, and finally coat with breadcrumbs.
  4. Heat oil in a non-stick pan and fry the chicken for 4 minutes on each side until golden brown.
  5. Remove the schnitzels and place them on a wire rack to keep them crispy. Serve with lemon wedges.
