German Schnitzel (Schweineschnitzel)

Ingredients

  • 4 pieces boneless pork steaks or chops
  • to taste salt
  • to taste freshly ground black pepper
  • ½ cup all-purpose flour
  • 1 teaspoon salt (for flour mixture)
  • 2 large eggs
  • ¾ cup plain breadcrumbs
  • as needed oil for frying

Instructions

  1. Pound the pork chops between plastic wrap until ¼ inch thick and season with salt and pepper.
  2. Set up three shallow bowls with flour mixture, beaten eggs, and breadcrumbs.
  3. Dip the pork in flour, then in eggs, and finally coat with breadcrumbs, shaking off excess.
  4. Heat oil to about 330°F and fry the schnitzel for 2-3 minutes on each side until golden brown.
  5. Drain on paper towels and serve immediately with lemon slices and parsley.
