Instructions
- Preheat the oven to 400°F.
- Season the pork with salt, thyme, and white pepper.
- Combine the creole seasoning, thyme, and white pepper, and sprinkle it evenly over the pork tenderloin.
- In a large skillet or cast iron, heat the oil over medium heat until hot, then add the pork.
- Brown the pork for about 5-6 minutes, rotating to brown all sides.
- Remove the pork from the skillet and transfer it to a roast rack.
- Place the pork in the oven and roast uncovered for about 13-15 minutes, flipping halfway through.
- Cook until the thickest part of the meat registers 140°F to 145°F.
- Transfer the loin to a cutting board and let it rest for 5-10 minutes before slicing.
