Instructions
- Preheat the oven to 350°F (177°C).
- Tie the roast tightly with kitchen twine at one-inch intervals.
- Mix smoked paprika, sea salt, and black pepper in a small bowl. Brush the roast with olive oil and rub the seasoning mixture onto it.
- In another bowl, mash together the butter, minced garlic, thyme, and rosemary.
- Sear the roast in a large Dutch oven over medium-high heat on all sides until browned, about 3 minutes per side.
- Spread the herb butter mixture over the roast and pour the chicken broth into the bottom of the pan.
- Insert a probe thermometer into the thickest part of the roast and cover it with foil or a lid.
- Bake in the oven until the internal temperature reaches 130-135°F (54-57°C), about 30-60 minutes.
- Remove the lid and continue roasting until the internal temperature reaches 140°F (60°C).
- Transfer the roast to a platter, tent with foil, and let it rest for 10 minutes before slicing.
