The gravy

Instructions
- Preheat the oven to 325°F and heat a skillet over medium-high heat.
- Dry the pork loin with paper towels and season with salt and pepper.
- Heat 1 Tbsp of olive oil in the skillet and sear the pork on all sides for about 8 minutes.
- Transfer the pork to a roasting pan and let it cool slightly.
- In a bowl, mix the remaining olive oil with thyme, rosemary, sage, garlic, and lemon zest.
- Spread the herb mixture over the pork loin.
- Insert a thermometer into the center of the pork loin.
- Bake the pork in the oven until it reaches an internal temperature of 145°F, about 50 to 70 minutes.
- Remove from the oven, tent with foil, and let it rest for 10 minutes before slicing.
- For the gravy, melt butter in a saucepan, add flour, and whisk for 1 ½ minutes.
- Slowly add chicken broth and drippings, stirring until thickened.
- Season the gravy and add heavy cream if desired.
- Serve the sliced pork with gravy on top.
