Pork Loin Roast

Ingredients

The roast

  • 3 - 4 lb pork loin
  • 2 Tbsp olive oil
  • to taste salt
  • to taste freshly ground black pepper
  • 2 tsp chopped fresh thyme
  • 2 tsp chopped fresh rosemary
  • 2 tsp chopped fresh sage
  • 1 ½ tsp minced garlic
  • 1 tsp lemon zest or orange zest (optional)

The gravy

  • 2 Tbsp butter or olive oil
  • 2 Tbsp flour
  • 1 cup low-sodium chicken broth
  • 2 Tbsp heavy cream (optional)

Instructions

  1. Preheat the oven to 325°F and heat a skillet over medium-high heat.
  2. Dry the pork loin with paper towels and season with salt and pepper.
  3. Heat 1 Tbsp of olive oil in the skillet and sear the pork on all sides for about 8 minutes.
  4. Transfer the pork to a roasting pan and let it cool slightly.
  5. In a bowl, mix the remaining olive oil with thyme, rosemary, sage, garlic, and lemon zest.
  6. Spread the herb mixture over the pork loin.
  7. Insert a thermometer into the center of the pork loin.
  8. Bake the pork in the oven until it reaches an internal temperature of 145°F, about 50 to 70 minutes.
  9. Remove from the oven, tent with foil, and let it rest for 10 minutes before slicing.
  10. For the gravy, melt butter in a saucepan, add flour, and whisk for 1 ½ minutes.
  11. Slowly add chicken broth and drippings, stirring until thickened.
  12. Season the gravy and add heavy cream if desired.
  13. Serve the sliced pork with gravy on top.
