Ingredients

The Pork

  • 3 pounds pork loin
  • 1 tablespoon olive oil

The Dry Rub

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried parsley
  • 1 teaspoon table salt
  • ½ teaspoon black pepper

The Roasting Sauce

  • 2 tablespoons garlic, finely minced
  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 1 tablespoon brown mustard
  • 1 tablespoon olive oil

The Vegetables

  • 2 pounds baby potatoes
  • 3 large carrots, cut into thick slices
  • 1 large sweet onion, cut into chunks

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with aluminum foil or parchment paper.
  2. Let the pork loin sit at room temperature for 15-20 minutes.
  3. Mix the dry rub ingredients in a small bowl.
  4. Pat the pork loin dry and coat it with the dry seasoning mixture.
  5. Sear the pork loin in a hot skillet with olive oil until browned on all sides.
  6. Prepare the roasting sauce by whisking together garlic, honey, soy sauce, mustard, and olive oil.
  7. Brush the honey-garlic mixture over the pork loin and set it aside.
  8. Toss the vegetables with olive oil and the reserved honey-soy mixture, then arrange them around the pork loin.
  9. Roast in the oven for 25 minutes, then tent with foil and continue cooking for 25-30 minutes until the internal temperature reaches 145°F.
  10. Let the pork rest for 10-15 minutes before slicing.
