Instructions
- Preheat the oven to 350°F and prepare a baking sheet with aluminum foil or parchment paper.
- Let the pork loin sit at room temperature for 15-20 minutes.
- Mix the dry rub ingredients in a small bowl.
- Pat the pork loin dry and coat it with the dry seasoning mixture.
- Sear the pork loin in a hot skillet with olive oil until browned on all sides.
- Prepare the roasting sauce by whisking together garlic, honey, soy sauce, mustard, and olive oil.
- Brush the honey-garlic mixture over the pork loin and set it aside.
- Toss the vegetables with olive oil and the reserved honey-soy mixture, then arrange them around the pork loin.
- Roast in the oven for 25 minutes, then tent with foil and continue cooking for 25-30 minutes until the internal temperature reaches 145°F.
- Let the pork rest for 10-15 minutes before slicing.
