Ingredients

The roast

  • 3-4 pound boneless pork loin roast
  • 3 cloves garlic, minced

  • 4 tablespoons coarse grain Dijon mustard
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil

The gravy

  • 3 tablespoons butter
  • 2 tablespoons finely minced shallot
  • 1 teaspoon minced garlic
  • 3 tablespoons flour
  • ½ cup dry white wine
  • 2 cups homemade chicken stock
  • 2 tablespoons stone ground mustard
  • to taste salt and white pepper
  • 1 teaspoon chopped fresh parsley

Instructions

  1. Mix the herb and mustard crust ingredients into a paste, adjusting olive oil as needed.
  2. Score the pork loin with shallow diagonal lines for even cooking.
  3. Rub the paste over the pork loin, ensuring it gets into the scored areas.
  4. Brown all sides of the roast in a skillet for 3-5 minutes per side.
  5. Roast the pork uncovered at 350°F (177°C) for about 20 minutes per pound until it reaches an internal temperature of 160°F.
  6. Let the roast rest for 15 minutes before carving.
  7. For the gravy, melt butter in the pan, sauté shallots and garlic, then stir in flour.
  8. Deglaze the pan with white wine, add chicken stock, and simmer until reduced.
  9. Mix in mustard and season with salt and pepper before serving with the pork.
