Instructions
- Mix the herb and mustard crust ingredients into a paste, adjusting olive oil as needed.
- Score the pork loin with shallow diagonal lines for even cooking.
- Rub the paste over the pork loin, ensuring it gets into the scored areas.
- Brown all sides of the roast in a skillet for 3-5 minutes per side.
- Roast the pork uncovered at 350°F (177°C) for about 20 minutes per pound until it reaches an internal temperature of 160°F.
- Let the roast rest for 15 minutes before carving.
- For the gravy, melt butter in the pan, sauté shallots and garlic, then stir in flour.
- Deglaze the pan with white wine, add chicken stock, and simmer until reduced.
- Mix in mustard and season with salt and pepper before serving with the pork.
