Perfect Sirloin Beef Roast

Instructions
- The day before cooking, grind the spices together and trim excess fat from the roast.
- Rub the spice mix on all surfaces of the roast and wrap it tightly with plastic film. Refrigerate overnight.
- When ready to cook, remove the roast from the fridge, unwrap it, and tie it with butcher's twine if necessary.
- Preheat the oven to 325°F (163°C).
- Place onion, celery, carrots, garlic, and water in a large baking dish, then place the roast on top.
- Bake uncovered for about 15 minutes per pound or until the internal temperature reaches 115°F to 125°F.
- Turn off the oven, tent the roast with aluminum foil, and leave it in the oven for an additional 20 to 40 minutes until desired doneness.
- Remove the roast from the oven, let it rest for 20 minutes, then carve and serve.
