Perfect Sirloin Beef Roast

Ingredients

The roast and vegetables

  • 1 piece beef sirloin roast, about 3 kg (6.5 lb)
  • 1 large onion, peel on, quartered
  • 2 ribs celery, each cut in half
  • 2 large carrots, peel on, each cut in half both crosswise and lengthwise
  • 4-5 cloves garlic, peel on, smashed with the side of a knife
  • ½ cup water

The spice mix

  • 3 tbsp dried onion flakes
  • 2 tbsp dried oregano
  • 1 tbsp coriander seeds
  • 1 tbsp Himalayan salt
  • 1 tbsp black peppercorns
  • tsp chili pepper flakes

Instructions

  1. The day before cooking, grind the spices together and trim excess fat from the roast.
  2. Rub the spice mix on all surfaces of the roast and wrap it tightly with plastic film. Refrigerate overnight.
  3. When ready to cook, remove the roast from the fridge, unwrap it, and tie it with butcher's twine if necessary.
  4. Preheat the oven to 325°F (163°C).
  5. Place onion, celery, carrots, garlic, and water in a large baking dish, then place the roast on top.
  6. Bake uncovered for about 15 minutes per pound or until the internal temperature reaches 115°F to 125°F.
  7. Turn off the oven, tent the roast with aluminum foil, and leave it in the oven for an additional 20 to 40 minutes until desired doneness.
  8. Remove the roast from the oven, let it rest for 20 minutes, then carve and serve.
