Instructions
- Pat the roast dry and refrigerate uncovered overnight if possible.
- Remove from the fridge, pat dry again, and tie with kitchen twine at 1-inch intervals.
- Rub the roast with 1 tablespoon of olive oil.
- Mix garlic powder, onion powder, salt, pepper, and dried herbs in a bowl, then rub the mixture over the roast.
- Let the meat rest for 1 hour to come to room temperature.
- Preheat the oven to 300°F (121°C).
- Heat the remaining olive oil in a large skillet and sear the roast on all sides for about 3 minutes each until browned.
- Transfer the roast to a roasting pan and bake until it reaches the desired internal temperature (115°F for rare, 125°F for medium rare, etc.).
- Remove from the oven, cover loosely with foil, and let it rest for about 15 minutes before slicing against the grain.
