Ingredients

The roast

  • 3 lb Sirloin tip roast

The seasoning

  • 2 tbsp Olive oil
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Sea salt
  • ¾ tsp Black pepper
  • 2 tsp Dried rosemary
  • 2 tsp Dried thyme
  • 2 tsp Dried oregano

Instructions

  1. Pat the roast dry and refrigerate uncovered overnight if possible.
  2. Remove from the fridge, pat dry again, and tie with kitchen twine at 1-inch intervals.
  3. Rub the roast with 1 tablespoon of olive oil.
  4. Mix garlic powder, onion powder, salt, pepper, and dried herbs in a bowl, then rub the mixture over the roast.
  5. Let the meat rest for 1 hour to come to room temperature.
  6. Preheat the oven to 300°F (121°C).
  7. Heat the remaining olive oil in a large skillet and sear the roast on all sides for about 3 minutes each until browned.
  8. Transfer the roast to a roasting pan and bake until it reaches the desired internal temperature (115°F for rare, 125°F for medium rare, etc.).
  9. Remove from the oven, cover loosely with foil, and let it rest for about 15 minutes before slicing against the grain.
