Ingredients

The truffles

  • 6 ounces gluten free cookies
  • 1 cup gluten free pretzel sticks
  • heaping ⅓ cup smooth nut butter or sunflower seed butter
  • 1 teaspoon pure vanilla extract
  • ½ cup dairy free chocolate chips or dark chocolate baking bar

Decorative toppings

  • to taste sprinkles, sparkling cane sugar, or melted white chocolate

Instructions

  1. Blend the cookies in a food processor until crumbly and transfer to a mixing bowl.
  2. Crush the pretzel sticks in a food processor or ziplock bag until crumbly.
  3. Combine the crushed pretzels with the cookie mix, then add the nut butter and vanilla, mixing until a dough forms.
  4. Scoop out small portions of the dough and roll them into balls, placing them on a baking sheet.
  5. Freeze the balls for 10 minutes while melting the chocolate in the microwave or on the stove.
  6. Dip each ball in the melted chocolate, coating evenly, and place back on the baking sheet.
  7. Add decorative toppings if desired and freeze again for 10-15 minutes to set the chocolate.
  8. Store in an airtight container in the fridge or at room temperature for up to a week.
