Ingredients

The pickling mixture

  • 1 cup apple cider vinegar
  • 1 cup filtered water
  • 2 teaspoons sea salt
  • 1 tablespoon coconut/cane/brown sugar
  • handful peppercorns

The vegetables

  • ½ head red cabbage, chopped
  • slices lime (optional)
  • as needed additional seasonings (e.g., cumin seeds, jalapeño)

Instructions

  1. Combine apple cider vinegar, filtered water, sea salt, sugar, and peppercorns in a pot and bring to a boil for 2 minutes.
  2. Add the chopped red cabbage to the boiling mixture and boil for an additional 2 minutes.
  3. Remove from heat and let cool for 1 minute before transferring to a mason jar.
  4. Add lime slices and swirl to mix everything together.
  5. Allow the mixture to cool to room temperature before sealing the jar.
  6. For best flavor, let the pickles sit for at least a few hours, ideally overnight or up to a week.
