Quick Pickled Cabbage

Instructions
- Combine apple cider vinegar, filtered water, sea salt, sugar, and peppercorns in a pot and bring to a boil for 2 minutes.
- Add the chopped red cabbage to the boiling mixture and boil for an additional 2 minutes.
- Remove from heat and let cool for 1 minute before transferring to a mason jar.
- Add lime slices and swirl to mix everything together.
- Allow the mixture to cool to room temperature before sealing the jar.
- For best flavor, let the pickles sit for at least a few hours, ideally overnight or up to a week.
