Instructions
- Combine vinegar, water, sea salt, sugar, and peppercorns in a pot and bring to a boil for 2 minutes.
- Add the sliced onions to the boiling brine and boil for an additional minute.
- Remove the pot from heat and let the mixture cool for 1 minute before transferring to a mason jar.
- Add lime slices to the jar and mix well.
- Allow the mixture to cool completely to room temperature before refrigerating.
