Ingredients

The pickling brine

  • 1 cup apple cider vinegar
  • 1 cup filtered water
  • 2 teaspoons sea salt
  • 1 tablespoon sugar (coconut, cane, or brown)
  • 1 teaspoon peppercorns

The vegetables

  • 2 regular sized red onions
  • lime slices lime slices

Instructions

  1. Combine vinegar, water, sea salt, sugar, and peppercorns in a pot and bring to a boil for 2 minutes.
  2. Add the sliced onions to the boiling brine and boil for an additional minute.
  3. Remove the pot from heat and let the mixture cool for 1 minute before transferring to a mason jar.
  4. Add lime slices to the jar and mix well.
  5. Allow the mixture to cool completely to room temperature before refrigerating.
