The onions

red onions, cut in half and sliced thin
Instructions
- In a medium saucepan, bring the apple cider vinegar, red wine vinegar, maple syrup, black peppercorns, and sea salt to a boil.
- Add the sliced onions and return to a boil.
- Remove from heat and transfer the mixture to a bowl.
- Cover and allow to cool completely.
- Store in an airtight container in the refrigerator for up to two weeks.
