Ingredients

The pickling solution

  • ½ cup apple cider vinegar
  • ½ cup red wine vinegar
  • 1 tablespoon maple syrup or sweetener
  • 1 teaspoon black peppercorns
  • 1 teaspoon sea salt

The onions

  • 2 pieces red onions, cut in half and sliced thin

Instructions

  1. In a medium saucepan, bring the apple cider vinegar, red wine vinegar, maple syrup, black peppercorns, and sea salt to a boil.
  2. Add the sliced onions and return to a boil.
  3. Remove from heat and transfer the mixture to a bowl.
  4. Cover and allow to cool completely.
  5. Store in an airtight container in the refrigerator for up to two weeks.
