Quick Pickled Onions

Instructions
- Slice the red onion as thin as possible and set aside.
- In a large bowl, combine the hot water, apple cider vinegar, sugar, salt, and peppercorns, stirring until dissolved.
- Add the sliced onions to the bowl and press them down to submerge in the liquid.
- Cover the bowl and let it sit at room temperature for 1 hour, or refrigerate for longer storage.
