Ingredients

  • 1 large red onion
  • 1 cup hot water
  • ½ cup apple cider vinegar

  • teaspoons sea salt
  • 10–12 pieces whole peppercorns (optional)

Instructions

  1. Slice the red onion as thin as possible and set aside.
  2. In a large bowl, combine the hot water, apple cider vinegar, sugar, salt, and peppercorns, stirring until dissolved.
  3. Add the sliced onions to the bowl and press them down to submerge in the liquid.
  4. Cover the bowl and let it sit at room temperature for 1 hour, or refrigerate for longer storage.
