Ingredients

The pickling mixture

  • ½ cup rice vinegar
  • ½ cup red wine vinegar
  • ¼ cup water
  • 1 tablespoon sugar

The onions

  • 1 large red onion

Optional ingredients

  • 1 large clove garlic (sliced)
  • to taste herbs (sprigs)

Instructions

  1. Peel the onion and slice it thinly or into half-moons.
  2. In a bowl, combine the rice vinegar, red wine vinegar, water, and sugar, stirring until the sugar is dissolved.
  3. Add the sliced onions to the mixture, along with any optional ingredients if using.
  4. Let the mixture sit for at least 10 minutes, but it can be stored in the fridge for up to a couple of weeks.
