Burrata with Heirloom Tomatoes

Ingredients

Lemon-Thyme Oil

  • ½ cup extra-virgin olive oil
  • 1 clove garlic
  • 1 small lemon peel
  • 4 sprigs fresh thyme

Burrata Platter

  • 4 pieces heirloom tomatoes
  • 1 piece ripe peach
  • 1 8-ounce ball fresh burrata
  • ½ cup fresh basil and/or mint leaves
  • 1 tablespoon toasted pistachios
  • optional cherries or fresh currants
  • to taste flaky sea salt
  • to taste freshly ground black pepper
  • for serving toasted bread

Instructions

  1. Make the lemon-thyme oil by combining olive oil, garlic, lemon peel, and thyme in a saucepan over low heat. Warm gently, then let steep for 20 minutes before straining.
  2. Arrange the sliced tomatoes, peach slices, and burrata on a platter.
  3. Sprinkle with salt and drizzle some of the lemon-thyme oil over the top.
  4. Garnish with basil, mint, and pistachios. Add cherries or currants if desired.
  5. Season to taste with salt and pepper and serve with toasted bread.
