Burrata with Heirloom Tomatoes

Instructions
- Make the lemon-thyme oil by combining olive oil, garlic, lemon peel, and thyme in a saucepan over low heat. Warm gently, then let steep for 20 minutes before straining.
- Arrange the sliced tomatoes, peach slices, and burrata on a platter.
- Sprinkle with salt and drizzle some of the lemon-thyme oil over the top.
- Garnish with basil, mint, and pistachios. Add cherries or currants if desired.
- Season to taste with salt and pepper and serve with toasted bread.
