Turkey Lasagna Wonton Cups

Ingredients

The filling

  • 1 pound ground turkey
  • 6 ounces diced pancetta
  • ¼ cup diced onion
  • ½ teaspoon Italian seasoning
  • ½ teaspoon basil flakes
  • ½ teaspoon parsley flakes
  • 1 clove garlic
  • 2 cups marinara

The cheese

  • 8 ounces ricotta cheese
  • 8 ounces shredded mozzarella
  • 8 ounces shredded Italian cheese

The wrappers

  • lots of wonton wrappers

Seasoning

  • to taste salt and pepper

Instructions

  1. Sauté ground turkey, pancetta, and onion in a skillet until the turkey is browned.
  2. Add minced garlic, Italian seasoning, basil, parsley, salt, and pepper to the skillet and mix well.
  3. Stir in marinara sauce and set the mixture aside.
  4. In a separate bowl, combine ricotta, mozzarella, and Italian cheese with remaining basil and parsley.
  5. Grease a cupcake pan and place wonton wrappers in each cup.
  6. Layer a teaspoon of the meat mixture followed by a teaspoon of the cheese mixture in each wonton wrapper, repeating the layers.
  7. Bake the wonton cups over hot coals at 350°F for 20 minutes until hot and bubbly.
