Ingredients

The filling

  • 8 slices center cut bacon, cooked crisp and chopped
  • 12 oz deli sliced turkey breast, diced
  • 4 wedges The Laughing Cow Light Swiss or White Cheddar Cheese Wedges, chopped
  • 1 tablespoon yellow mustard
  • 24 pieces wonton wrappers
  • 4 oz 2% shredded sharp cheddar

The toppings

  • ¾ cup shredded lettuce
  • 6 pieces grape tomatoes, sliced or diced
  • 2 oz avocado, diced

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a microwave-safe bowl, combine 6 slices of chopped bacon, turkey, and cheese wedges, then heat for 1 ½ minutes.
  3. Mix in the mustard and spoon half of the mixture into wonton wrappers placed in the muffin tin.
  4. Sprinkle half of the shredded cheddar over the turkey mixture, then layer another wonton wrapper on top and repeat with the remaining mixture and cheese.
  5. Bake for 18-20 minutes until golden brown and heated through.
  6. Allow to cool for 1-2 minutes, then top each cupcake with lettuce, tomatoes, avocado, and remaining bacon before serving.
