Ingredients

The salad

  • ¼ cup toasted nuts (optional)

The dressing

  • ¼ cup olive oil
  • tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • ½ teaspoon salt and pepper

Instructions

  1. Combine black rice, strawberries, scallions, and Italian parsley in a bowl.
  2. Add the dressing ingredients and toss well, adjusting seasoning to taste.
