Peanut Butter Raspberry Jelly Cups

Ingredients

  • 1 cup Hu Kitchen Chocolate Gems
  • ¾ cup creamy peanut butter
  • 1 cup fresh raspberries
  • 1 tsp coconut oil
  • ¼ cup chia seeds
  • to taste sea salt flakes

Instructions

  1. Line a muffin tin with 9 liners.
  2. In a small saucepan, combine raspberries, coconut oil, and chia seeds, and mash the raspberries on low heat for 3-5 minutes.
  3. Turn off the heat and let the mixture sit to thicken.
  4. Melt the chocolate gems either on the stove or in the microwave.
  5. Spoon about one teaspoon of melted chocolate into the bottom of each muffin liner.
  6. Add about one teaspoon of peanut butter into each liner, followed by the raspberry mixture.
  7. Drizzle some remaining chocolate on top of each cup.
  8. Refrigerate for at least two hours until firm.
