Peanut Butter Raspberry Jelly Cups

Instructions
- Line a muffin tin with 9 liners.
- In a small saucepan, combine raspberries, coconut oil, and chia seeds, and mash the raspberries on low heat for 3-5 minutes.
- Turn off the heat and let the mixture sit to thicken.
- Melt the chocolate gems either on the stove or in the microwave.
- Spoon about one teaspoon of melted chocolate into the bottom of each muffin liner.
- Add about one teaspoon of peanut butter into each liner, followed by the raspberry mixture.
- Drizzle some remaining chocolate on top of each cup.
- Refrigerate for at least two hours until firm.
