Mini Peanut Butter & Jelly Dark Chocolate Cups

Instructions
- Line two 24-cup mini muffin tins with mini muffin liners.
- Melt dark chocolate chips and ¼ cup coconut oil in a microwave, stirring every 30 seconds until smooth.
- In another bowl, melt the remaining ¼ cup coconut oil and peanut butter together in the microwave for 1 minute, then mix in the powdered sugar.
- Spoon ½ tablespoon of the chocolate mixture into each muffin liner, followed by ½ tablespoon of the peanut butter mixture, a drop of strawberry preserves, and finish with another ½ tablespoon of chocolate mixture.
- Tap the muffin tin gently on the counter to flatten each layer.
- Refrigerate for at least 30 minutes until hardened, then store in an airtight container.
