Ingredients

Chocolate Layers

  • 10 oz Sugar-free dark chocolate chips
  • 5 tbsp Coconut oil
  • ½ tsp Vanilla extract

Peanut Butter Layer

  • tbsp Peanut butter
  • 2 tsp Coconut oil
  • 2 tbsp Besti Powdered Monk Fruit Allulose Blend
  • ½ tbsp Peanut flour
  • tsp Vanilla extract
  • 1 pinch Sea salt

Instructions

  1. Line a muffin pan with parchment paper liners.
  2. Melt half of the chocolate and half of the coconut oil in a double boiler or microwave, stirring frequently, then stir in half of the vanilla.
  3. Fill the bottom of the cups with chocolate and freeze until firm.
  4. Heat the peanut butter and coconut oil, then mix in the powdered sweetener, peanut flour, and optional ingredients until smooth.
  5. Spoon the peanut butter mixture into the cups over the chocolate layer and freeze until firm.
  6. Melt the remaining chocolate and coconut oil, stir in the remaining vanilla, and pour over the peanut butter layer.
  7. Freeze until completely firm before serving.
