Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine the quartered potatoes and pesto, tossing to coat.
- Transfer the potatoes to a large baking sheet or shallow roasting pan and season with salt and pepper.
- Roast the potatoes for 20 minutes, then remove from the oven.
- Sprinkle the Parmesan cheese evenly over the potatoes and return to the oven.
- Roast for an additional 10-15 minutes until the potatoes are tender and crispy.
- Remove from the oven and serve warm.
