Ingredients

The potatoes

  • 2 lbs red potatoes

The seasoning

  • 2 tablespoons Private Selection Basil Pesto
  • to taste salt
  • to taste black pepper

The cheese

  • 3 tablespoons grated fresh Parmesan cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine the quartered potatoes and pesto, tossing to coat.
  3. Transfer the potatoes to a large baking sheet or shallow roasting pan and season with salt and pepper.
  4. Roast the potatoes for 20 minutes, then remove from the oven.
  5. Sprinkle the Parmesan cheese evenly over the potatoes and return to the oven.
  6. Roast for an additional 10-15 minutes until the potatoes are tender and crispy.
  7. Remove from the oven and serve warm.
