Citrus Parmesan Farro Salad

Instructions
- Cook the farro with salt and water in a saucepan until tender, about 45 minutes to an hour.
- While the farro cooks, prepare the dressing by whisking together orange juice, zest, shallot, Parmesan, white wine vinegar, and olive oil.
- Once the farro is cooked, drain any excess water and let it cool.
- In a large bowl, toss the salad greens with some of the dressing.
- Add the cooled farro and more dressing, then gently toss again.
- Top with goat cheese and almonds before serving.
