Citrus Parmesan Farro Salad

Ingredients

  • 4 to 6 big handfuls mixed salad greens
  • 2 cups farro
  • 5 cups water or stock
  • 2 teaspoons fine-grain sea salt
  • 1 medium orange (zest and juice)
  • 1 medium shallot (chopped)
  • cup Parmesan (freshly shredded)
  • 1 tablespoon white wine vinegar
  • ½ cup olive oil
  • ½ cup Spanish almonds or toasted regular almonds
  • ½ cup goat cheese (crumbled)

Instructions

  1. Cook the farro with salt and water in a saucepan until tender, about 45 minutes to an hour.
  2. While the farro cooks, prepare the dressing by whisking together orange juice, zest, shallot, Parmesan, white wine vinegar, and olive oil.
  3. Once the farro is cooked, drain any excess water and let it cool.
  4. In a large bowl, toss the salad greens with some of the dressing.
  5. Add the cooled farro and more dressing, then gently toss again.
  6. Top with goat cheese and almonds before serving.
