Strawberry Farro Salad

Ingredients

The salad

  • 1 cup farro
  • cups water
  • 13 pieces strawberries, hulled and sliced
  • 2 oz. goat cheese, crumbled
  • cup pecans, chopped
  • ¼ cup basil, chopped

The dressing

  • 1 Tbsp orange zest
  • ¼ cup orange juice
  • 1 Tbsp honey or agave nectar
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp olive oil

Instructions

  1. Combine water and farro in a saucepan and bring to a boil.
  2. Reduce heat and let the farro simmer for 30 minutes.
  3. Fluff the farro with a fork and let it cool completely in a bowl.
  4. In a small bowl, whisk together orange zest, orange juice, honey or agave, salt, and pepper, then slowly whisk in olive oil until emulsified.
  5. In a medium bowl, combine farro, strawberries, basil, pecans, and goat cheese, then pour the dressing over the salad and toss to combine.
