Strawberry Farro Salad

The salad

The dressing

Instructions
- Combine water and farro in a saucepan and bring to a boil.
- Reduce heat and let the farro simmer for 30 minutes.
- Fluff the farro with a fork and let it cool completely in a bowl.
- In a small bowl, whisk together orange zest, orange juice, honey or agave, salt, and pepper, then slowly whisk in olive oil until emulsified.
- In a medium bowl, combine farro, strawberries, basil, pecans, and goat cheese, then pour the dressing over the salad and toss to combine.
