Salt Crusted Fish

Ingredients

  • 1 whole fish (1–2 lbs)
  • 1 tsp olive oil
  • 4 ½ cups salt
  • 3 large egg whites
  • ¼ cup water
  • 2 tbs water

Instructions

  1. Preheat the oven to 400 degrees.
  2. Prepare the fish by removing its insides and scales, then rinse and pat dry.
  3. Rub the outside of the fish with olive oil and stuff it with your choice of aromatics.
  4. Mix the salt with egg whites and water, then spread a layer of salt mixture on a baking pan.
  5. Place the fish on the salt bed and cover it with a salt crust.
  6. Roast the fish for 20-30 minutes until an instant read thermometer shows 135 degrees.
  7. Let the fish rest for 5-10 minutes after removing it from the oven.
  8. Break the salt crust with a spoon, expose the fish, and serve with olive oil and lemon juice.
