Salt Crusted Fish

Instructions
- Preheat the oven to 400 degrees.
- Prepare the fish by removing its insides and scales, then rinse and pat dry.
- Rub the outside of the fish with olive oil and stuff it with your choice of aromatics.
- Mix the salt with egg whites and water, then spread a layer of salt mixture on a baking pan.
- Place the fish on the salt bed and cover it with a salt crust.
- Roast the fish for 20-30 minutes until an instant read thermometer shows 135 degrees.
- Let the fish rest for 5-10 minutes after removing it from the oven.
- Break the salt crust with a spoon, expose the fish, and serve with olive oil and lemon juice.
