Ingredients

The chili

  • 2 tablespoon avocado oil
  • 2 pounds ground turkey
  • 2 cups chopped onions
  • 2 tablespoon minced garlic
  • 1 large red bell pepper
  • 1 cup chopped celery
  • 1 jalapeno pepper cored, deveined, and finely chopped
  • 4 tablespoon chili powder
  • 2 teaspoon ground cumin
  • ½ tablespoon dried oregano
  • 2 bay leaves
  • 2 tablespoon tomato paste
  • 1 24 ounce can fire-roasted diced tomatoes
  • 1 cup chicken broth or water
  • 2 15 ounce cans red kidney beans
  • to taste salt and pepper

Garnishes

  • shredded cheddar cheese
  • sliced green onions
  • chopped yellow onions
  • diced avocado
  • fresh or pickled jalapeño slices
  • sour cream or yogurt

Instructions

  1. Heat 1 tablespoon of oil in a large pot over medium-high heat and brown the turkey, breaking it up as it cooks.
  2. Transfer the browned turkey to the slow cooker.
  3. In the same pot, heat the remaining oil and sauté onions, garlic, bell pepper, celery, jalapeño, chili powder, cumin, oregano, and bay leaves for 3-5 minutes until softened.
  4. Stir in the tomato paste and cook for 1 minute, then transfer the mixture to the slow cooker.
  5. Add diced tomatoes and chicken broth to the slow cooker and stir well.
  6. Cover and cook on low heat for 3 hours.
  7. Add drained beans to the slow cooker, stir, and cook uncovered for an additional hour on low heat.
  8. Serve in bowls and add desired garnishes.
