Instructions
- Heat 1 tablespoon of oil in a large pot over medium-high heat and brown the turkey, breaking it up as it cooks.
- Transfer the browned turkey to the slow cooker.
- In the same pot, heat the remaining oil and sauté onions, garlic, bell pepper, celery, jalapeño, chili powder, cumin, oregano, and bay leaves for 3-5 minutes until softened.
- Stir in the tomato paste and cook for 1 minute, then transfer the mixture to the slow cooker.
- Add diced tomatoes and chicken broth to the slow cooker and stir well.
- Cover and cook on low heat for 3 hours.
- Add drained beans to the slow cooker, stir, and cook uncovered for an additional hour on low heat.
- Serve in bowls and add desired garnishes.
