Slow-Cooker Turkey Chili

Ingredients

The chili base

  • 3 teaspoons high heat oil (like canola oil)
  • 1 pound lean ground turkey
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 28-ounce can whole tomatoes with juice
  • 1 14-ounce can garbanzo beans (chickpeas), drained
  • 1 14-ounce can black beans, drained
  • ¾ cup broth (chicken, beef, or vegetable)
  • 2 tablespoons onion flakes (or 1 cup diced onion)
  • teaspoon crumbled dried oregano

Toppings

  • to taste diced avocado
  • to taste cilantro leaves
  • to taste lime wedges
  • to taste tortilla chips
  • to taste cheese

Instructions

  1. Heat oil in a large sauté pan over medium-high heat.
  2. Add ground turkey and cook until partially golden, about 4 minutes.
  3. Season turkey with chili powder, garlic powder, cumin, salt, and pepper, then break it up and remove from heat.
  4. In the slow cooker, break up the tomatoes and add them along with the cooked turkey, beans, broth, onion flakes, and oregano.
  5. Cover and cook on low for 4½ to 6 hours, or on high for 2 hours and then low for 1 hour.
