Ingredients

The base

  • 2 Tablespoons Olive Oil
  • 1 large Yellow Onion, chopped
  • 2 large Bay Leaves
  • 1 cup Celery, diced
  • 5 cloves Garlic, pressed or minced
  • 2 lbs Ground Turkey

The seasonings

  • teaspoons Kosher Salt, divided
  • ½ teaspoon Pepper
  • 1 can (7 oz) Diced Green Chiles (mild)
  • ½ jar (15 oz) Roasted Red Bell Peppers, chopped
  • 1 can (14 oz) Diced Tomatoes (with juice)
  • 2 cans (14 oz) Tomato Sauce
  • 2 cans (15 oz) Black Beans, drained and rinsed
  • 2 cans (15 oz) Red Kidney Beans, drained and rinsed
  • 1 can (15 oz) Garbanzo Beans, drained and rinsed
  • ½ teaspoon Chipotle Chili Powder
  • 2 teaspoons Mexican Oregano, dried
  • 2 Tablespoons Cumin
  • 3 Tablespoons Chili Powder

Instructions

  1. Heat a skillet on medium-high heat and add olive oil.
  2. Add onions, bay leaves, and celery, cooking until softened.
  3. Add garlic and cook for about 30 seconds, stirring constantly.
  4. Add ground turkey, 1 teaspoon of salt, and pepper, cooking until done.
  5. Transfer the meat mixture to a slow cooker.
  6. Add all remaining ingredients to the slow cooker and mix well.
  7. Cook on Low for 7-8 hours or High for 3-4 hours.
  8. Taste and adjust salt or seasonings as needed.
  9. Serve with corn bread and any desired toppings.
