Ingredients

  • 4 pieces boneless skinless chicken breasts
  • ½ cup grated parmesan cheese
  • ½ cup breadcrumbs
  • ½ teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste black pepper
  • 4 tablespoons butter, melted
  • 1 pound small potatoes, halved or quartered
  • 2 tablespoons chopped parsley
  • as needed cooking spray
  • as needed lemon wedges (optional garnish)

Instructions

  1. Preheat the oven to 400°F and coat a sheet pan with cooking spray.
  2. In a bowl, mix together the parmesan cheese, breadcrumbs, garlic, Italian seasoning, salt, and pepper.
  3. Dip the top of each chicken breast into the melted butter, then press it into the breadcrumb mixture to coat.
  4. Place the chicken breasts on the prepared sheet pan.
  5. Scatter the potatoes around the chicken, drizzle the remaining butter over them, and season with salt and pepper.
  6. Bake for 25-30 minutes until the chicken is cooked through and the potatoes are tender.
  7. Sprinkle with parsley and serve, garnished with lemon wedges if desired.
