Ingredients

The pasta

  • 1 cup pastina pasta

The chicken mixture

  • 2 tablespoons olive oil
  • ½ cup cubed chicken breast
  • ½ cup diced onion
  • 1 clove garlic
  • 1 14.5-ounce can diced tomatoes with juice
  • 1 cup shredded mozzarella
  • ¼ cup chopped fresh flat-leaf parsley
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

The topping

  • ¼ cup bread crumbs
  • ¼ cup grated Parmesan
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 400°F.
  2. Boil salted water in a medium pot, add pasta, and cook until tender, about 5 minutes. Drain and transfer to a mixing bowl.
  3. In a sauté pan, heat olive oil over medium heat, add chicken, and cook for 3 minutes.
  4. Add onions and garlic, cook until onions are soft and chicken is done, about 5 minutes more.
  5. Combine chicken mixture with pasta in the bowl, then add tomatoes, mozzarella, parsley, salt, and pepper.
  6. Transfer the mixture to a buttered baking dish.
  7. Mix bread crumbs and Parmesan in a small bowl and sprinkle over the pasta mixture.
  8. Dot the top with small pieces of butter and bake until golden brown, about 30 minutes.
