Instructions
- Preheat the oven to 400°F.
- Boil salted water in a medium pot, add pasta, and cook until tender, about 5 minutes. Drain and transfer to a mixing bowl.
- In a sauté pan, heat olive oil over medium heat, add chicken, and cook for 3 minutes.
- Add onions and garlic, cook until onions are soft and chicken is done, about 5 minutes more.
- Combine chicken mixture with pasta in the bowl, then add tomatoes, mozzarella, parsley, salt, and pepper.
- Transfer the mixture to a buttered baking dish.
- Mix bread crumbs and Parmesan in a small bowl and sprinkle over the pasta mixture.
- Dot the top with small pieces of butter and bake until golden brown, about 30 minutes.
