Orange Dijon Chicken

Ingredients

The marinade

  • ¾ cup Dijon-style mustard
  • ¼ cup freshly squeezed orange juice
  • 2 tablespoons avocado oil or extra virgin olive oil
  • 6 cloves garlic, minced
  • 2 teaspoons Diamond Crystal kosher salt

The chicken

  • 3 pounds chicken drumsticks

Optional garnish

  • ¼ cup minced Italian parsley and/or chives

Instructions

  1. Combine the mustard, orange juice, olive oil, garlic, and salt in a large bowl and mix well.
  2. Add the chicken drumsticks to the bowl and mix to coat them evenly.
  3. Marinate the chicken in the refrigerator for up to a day if possible.
  4. Preheat the oven to 425°F (or 400°F on convection mode).
  5. Line a baking sheet with aluminum foil and place a wire rack on top.
  6. Shake off excess marinade and lay the chicken drumsticks on the rack in a single layer.
  7. Roast for 20 minutes, then flip the drumsticks and rotate the tray.
  8. Continue roasting for another 20 minutes or until cooked through, reaching the appropriate internal temperature.
  9. Optionally, sprinkle chopped parsley or chives on top before serving.
