Instructions
- Make the marinade by blending shallots, cherries, balsamic vinegar, fish sauce, oil, salt, and pepper until smooth.
- Taste the marinade and adjust seasoning if necessary.
- Place the chicken drumsticks in a bowl and pour the marinade over them, ensuring they are well coated.
- Marinate the chicken in the fridge for 1 to 12 hours.
- Preheat the oven to 400°F (or 375°F for convection).
- Arrange the marinated chicken on a wire rack over a foil-lined baking sheet, shaking off excess marinade.
- Bake the chicken for 40 minutes, flipping halfway through, until the skin is crisp and the internal temperature reaches 165°F.
