Instructions
- Mix together the shallots, onions, vinegar, oil, coconut aminos, fish sauce, salt, and pepper in a large bowl.
- Add the chicken to the bowl and ensure it's well-covered in the marinade.
- Marinate the chicken in the fridge for a few hours or up to 24 hours.
- Preheat the oven to 400°F (convection) or 425°F (non-convection).
- Arrange the chicken skin-side down in an oven-safe baking dish and bake for 40-45 minutes, flipping halfway through.
- Broil for a few minutes if you want to brown the skin more.
- Serve the drumsticks on a platter and pour the cooking liquid over the chicken.
