Ingredients

The marinade

  • 2 large shallots, minced
  • 3 pieces Calçot onions or scallions, thinly sliced
  • 3 tablespoons sherry vinegar or balsamic vinegar
  • 3 tablespoons extra virgin olive oil or avocado oil or melted ghee or coconut oil
  • 1 tablespoon coconut aminos
  • 1 tablespoon Red Boat fish sauce
  • to taste Kosher salt
  • to taste Freshly ground pepper

The chicken

  • 10 drumsticks
  • 8 chicken thighs

Instructions

  1. Mix together the shallots, onions, vinegar, oil, coconut aminos, fish sauce, salt, and pepper in a large bowl.
  2. Add the chicken to the bowl and ensure it's well-covered in the marinade.
  3. Marinate the chicken in the fridge for a few hours or up to 24 hours.
  4. Preheat the oven to 400°F (convection) or 425°F (non-convection).
  5. Arrange the chicken skin-side down in an oven-safe baking dish and bake for 40-45 minutes, flipping halfway through.
  6. Broil for a few minutes if you want to brown the skin more.
  7. Serve the drumsticks on a platter and pour the cooking liquid over the chicken.
