Instructions
- Brine the drumsticks in whey or buttermilk and salt for 24 to 48 hours.
- Remove the drumsticks from the brine, rinse, and pat dry.
- Preheat the oven to 375°F and prepare the dipping stations.
- For the first station, mix tapioca flour, oregano, salt, pepper, paprika, garlic, onion powder, and chipotle powder in a bag.
- For the second station, whisk the egg and Frank's Red Hot Sauce together.
- For the third station, process lardons and almonds in a food processor until they resemble wet coarse sand.
- Coat the drumsticks in the tapioca flour mixture, then dip in the egg mixture, and finally coat with the lardons and almonds.
- Place the breaded drumsticks in a broiler pan and repeat with the remaining chicken.
- Bake for 40 to 45 minutes until crispy and golden brown.
