Ingredients

The chicken and brine

  • 8 pieces fresh chicken drumsticks
  • 2 cups whey or buttermilk
  • 1 tbsp Himalayan salt

Dipping Station #1

  • cups tapioca flour
  • 1 tbsp dried oregano
  • 1 tsp freshly cracked Himalayan salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp Himalayan salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp chipotle powder

Dipping Station #2

  • 1 large egg
  • ¼ cup Frank's Red Hot Sauce

Dipping Station #3

  • 1 cup crispy lardons
  • ½ cup sliced blanched almonds
  • 1-2 tbsp tapioca flour (if needed)

Instructions

  1. Brine the drumsticks in whey or buttermilk and salt for 24 to 48 hours.
  2. Remove the drumsticks from the brine, rinse, and pat dry.
  3. Preheat the oven to 375°F and prepare the dipping stations.
  4. For the first station, mix tapioca flour, oregano, salt, pepper, paprika, garlic, onion powder, and chipotle powder in a bag.
  5. For the second station, whisk the egg and Frank's Red Hot Sauce together.
  6. For the third station, process lardons and almonds in a food processor until they resemble wet coarse sand.
  7. Coat the drumsticks in the tapioca flour mixture, then dip in the egg mixture, and finally coat with the lardons and almonds.
  8. Place the breaded drumsticks in a broiler pan and repeat with the remaining chicken.
  9. Bake for 40 to 45 minutes until crispy and golden brown.
