Ingredients

The chicken

  • 8 pieces chicken drumsticks, skin removed

The sauce

  • 3 tbsp Dijon mustard
  • 1 tbsp light mayonnaise
  • 1 clove garlic, crushed
  • 1 lime squeezed, and lime zest
  • ¾ tsp black pepper
  • to taste kosher salt
  • 1 tsp dried parsley

Instructions

  1. Preheat the oven to 400°F.
  2. Rinse the chicken and remove the skin and fat, then pat dry and season with salt.
  3. In a small bowl, combine Dijon mustard, mayonnaise, lime juice, lime zest, garlic, and black pepper; mix well.
  4. Pour the sauce over the chicken and toss to coat evenly.
  5. Spray a baking pan with cooking spray to prevent sticking.
  6. Arrange the chicken in a single layer in the pan and sprinkle with dried parsley.
  7. Bake for about 35 minutes until cooked through, then broil for an additional 2 to 3 minutes to brown.
