Baked Mustard Lime Chicken

Ingredients

The chicken

  • 1 pound skinless boneless chicken breast

The marinade

  • ½ cup fresh lime juice
  • ½ cup fresh cilantro, chopped
  • ¼ cup dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • ½ teaspoon celtic sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. Combine lime juice, cilantro, mustard, olive oil, chili powder, salt, and pepper in a food processor.
  2. Pulse until the ingredients are well combined.
  3. Rinse the chicken breasts, pat them dry, and place them in a 7 x 11 inch baking dish.
  4. Pour the marinade over the chicken, cover, and refrigerate for at least 15 minutes or up to 6 hours.
  5. Bake at 350°F for 25-30 minutes uncovered, or until an instant-read thermometer reads 165°F.
  6. Serve with the cooked sauce spooned over the chicken.
