Instructions
- Combine all marinade ingredients in a bowl and whisk until well mixed.
- Place chicken in a baking dish and pour marinade over, ensuring all pieces are coated.
- Cover and refrigerate to marinate for at least 4 hours or overnight.
- Preheat the oven to 375°F.
- Heat oil in a skillet over medium-high heat and sear chicken breasts in batches until golden brown.
- Transfer seared chicken to a Dutch oven or oven-safe dish, pour remaining marinade over the chicken, and cover.
- Bake for 25 minutes, then remove the lid and bake for an additional 5 minutes to crisp the top.
- Serve immediately with cooking juices, garnished with lime slices and parsley.
