Ingredients

The chicken

  • 6 pieces large boneless skinless chicken breasts
  • 2-3 tbsp healthy cooking oil or fat of your choice

The marinade

  • ¼ cup freshly-squeezed lime juice
  • ¼ cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp powdered red pepper flakes
  • 2 pieces grated zest of limes

To garnish

  • ¼ cup chopped fresh parsley
  • to taste slices lime

Instructions

  1. Combine all marinade ingredients in a bowl and whisk until well mixed.
  2. Place chicken in a baking dish and pour marinade over, ensuring all pieces are coated.
  3. Cover and refrigerate to marinate for at least 4 hours or overnight.
  4. Preheat the oven to 375°F.
  5. Heat oil in a skillet over medium-high heat and sear chicken breasts in batches until golden brown.
  6. Transfer seared chicken to a Dutch oven or oven-safe dish, pour remaining marinade over the chicken, and cover.
  7. Bake for 25 minutes, then remove the lid and bake for an additional 5 minutes to crisp the top.
  8. Serve immediately with cooking juices, garnished with lime slices and parsley.
