Mustard-Roasted Chicken

Ingredients

The chicken

  • 4 pieces bone-in, skin-on thighs
  • 4 pieces bone-in, skin-on drumsticks

The marinade

  • ½ cup Dijon mustard
  • ½ cup buttermilk

The seasoning

  • 4 cloves garlic
  • 1 small handful fresh thyme leaves
  • 1 zest lemon
  • 1½ to 2 teaspoons Kosher salt
  • 1 teaspoon black pepper

The coating

  • 2 cups fresh breadcrumbs
  • ¼ cup olive oil

Instructions

  1. Preheat the oven to 400ºF and prepare a bowl with the mustard and buttermilk.
  2. Soak the chicken in the mustard-buttermilk mixture to coat.
  3. In a food processor, combine garlic, thyme, lemon zest, salt, and pepper, then add breadcrumbs and olive oil to moisten.
  4. Prepare a sheet pan lined with parchment paper and coat each piece of chicken with the breadcrumb mixture.
  5. Bake the chicken for approximately 40 minutes, checking for doneness and browning.
  6. Let the chicken rest for 5 to 10 minutes before serving.
