Instructions
- Preheat the oven to 400ºF and prepare a bowl with the mustard and buttermilk.
- Soak the chicken in the mustard-buttermilk mixture to coat.
- In a food processor, combine garlic, thyme, lemon zest, salt, and pepper, then add breadcrumbs and olive oil to moisten.
- Prepare a sheet pan lined with parchment paper and coat each piece of chicken with the breadcrumb mixture.
- Bake the chicken for approximately 40 minutes, checking for doneness and browning.
- Let the chicken rest for 5 to 10 minutes before serving.
