Ingredients

The spice mix

  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt

The fish and tortillas

  • 8 ounce tilapia, skin removed
  • 1 tablespoon vegetable oil
  • 8 pieces white corn tortillas

The toppings

  • 1 piece jalapeño, thinly sliced
  • ½ cup cotija cheese
  • ½ cup cilantro leaves
  • 1 piece avocado, sliced
  • 1 serving pickled carrots
  • 2 pieces limes, quartered

Instructions

  1. Mix the spices together in a small bowl and season the tilapia with the spice mix.
  2. Heat a cast iron skillet on high and warm the tortillas until lightly browned.
  3. Add oil to the skillet and cook the tilapia for about 3-4 minutes on each side.
  4. Assemble the tacos by placing fish on each tortilla and topping with jalapeño, pickled carrots, cotija cheese, avocado, and cilantro.
  5. Serve with lime wedges.
