Ingredients

The potatoes

  • 3 pieces russet potatoes

The toppings

  • 4 slices cooked and crumbled bacon
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions or scallions
  • to taste Ranch Dressing

The oil and seasoning

  • 2 tablespoons olive oil
  • ½ teaspoon dried chives
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • to taste salt and pepper

Instructions

  1. Scrub the potatoes clean and rub each with olive oil.
  2. Place the potatoes in the air fryer and cook at 400°F for 35-45 minutes until soft.
  3. Remove the potatoes and let them cool for 20-30 minutes.
  4. Slice each potato in half and scoop out the inner flesh, leaving about ¼ inch along the edges.
  5. Drizzle or spray the insides with olive oil and season with salt and your preferred seasoning.
  6. Top each potato skin with crumbled bacon and shredded cheddar cheese.
  7. Return the skins to the air fryer and cook at 350°F for 6-10 minutes until the cheese melts.
  8. Finish by topping with green onions and ranch dressing.
