Ingredients

The batter

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 ½ cups mashed bananas (about 4 ripe bananas)
  • 2 large eggs
  • ½ teaspoon pure vanilla extract

The topping

  • Jar of Nutella
  • 1 whole banana (for garnish, optional)

Instructions

  1. Preheat the oven to 350 degrees and spray a mini muffin tin.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Make a well in the center of the flour mixture and mix in the melted butter, mashed bananas, eggs, and vanilla until just combined.
  4. Spoon the batter evenly into the muffin cups.
  5. Swirl about ½ teaspoon of Nutella into each muffin cup using a toothpick.
  6. Bake for 10 to 15 minutes, or until a toothpick inserted comes out clean.
  7. Remove the cupcakes from the pan and cool completely on a wire rack.
