Ingredients

The filling

  • 4 medium peaches
  • ½ medium lemon, juiced
  • ½ tsp cornstarch
  • ½ tsp almond extract
  • ¼ cup sliced almonds

The topping

  • ¾ cup rolled oats
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp salt
  • 8 Tbsp butter (room temperature)

Instructions

  1. Wash and dice the peaches into one inch pieces, then place them in a glass casserole dish.
  2. Preheat the oven to 375°F.
  3. Sprinkle lemon juice, cornstarch, almond extract, and sliced almonds over the peaches and stir to coat.
  4. In a separate bowl, mix the flour, oats, brown sugar, cinnamon, and salt until well combined.
  5. Incorporate the room temperature butter into the dry mixture until evenly mixed.
  6. Pour the crumble topping over the peach mixture and bake for 45 minutes.
  7. Let cool slightly before serving.
