King Crab Cauliflower Fried Rice

Ingredients

  • 1 lb frozen King crab legs
  • 24 oz riced cauliflower
  • 1 tbsp sesame oil
  • 2 large eggs, beaten
  • 1 pinch salt
  • as needed spray cooking spray
  • ½ small onion, diced fine
  • 2 cloves garlic, minced
  • 5 pieces scallions, diced (whites and greens separated)
  • 3 tbsp soy sauce or gf soy sauce

Instructions

  1. Rice the cauliflower using a food processor until it resembles rice or couscous, then set aside.
  2. Boil water in a large pot, add the crab legs, cover, and cook for about 10 minutes until heated through, then flake the crab meat.
  3. Season the beaten eggs with salt, then cook in a large sauté pan or wok until set and set aside.
  4. In the same pan, reduce heat and add sesame oil, sauté onions, scallion whites, and garlic until soft.
  5. Increase heat, add the riced cauliflower and soy sauce, cover, and cook for 5 to 6 minutes until slightly crispy.
  6. Stir in the cooked eggs and crab meat, and mix in the scallion greens before serving.
