King Crab Cauliflower Fried Rice

Instructions
- Rice the cauliflower using a food processor until it resembles rice or couscous, then set aside.
- Boil water in a large pot, add the crab legs, cover, and cook for about 10 minutes until heated through, then flake the crab meat.
- Season the beaten eggs with salt, then cook in a large sauté pan or wok until set and set aside.
- In the same pan, reduce heat and add sesame oil, sauté onions, scallion whites, and garlic until soft.
- Increase heat, add the riced cauliflower and soy sauce, cover, and cook for 5 to 6 minutes until slightly crispy.
- Stir in the cooked eggs and crab meat, and mix in the scallion greens before serving.
