Ingredients

The filling

  • 2 medium leaves kale
  • 1 tablespoon cilantro
  • 2 teaspoons fresh jalapeño
  • 1 squeeze fresh lime juice
  • 1 splash olive oil
  • 1 pinch ground cumin
  • 1 dash chili powder
  • 1 dash sea salt
  • ½ cup cooked or canned black beans
  • 1 clove garlic

The assembly

  • 1 small (8 inch) whole wheat tortilla
  • ½ small avocado
  • 1 tablespoon chopped red onion
  • 1 to 2 tablespoons crumbled feta cheese
  • to taste sour cream or plain Greek yogurt (optional)

Instructions

  1. Combine kale, cilantro, jalapeño, lime juice, olive oil, cumin, chili powder, and sea salt in a bowl and mix well to marinate.
  2. Warm black beans and minced garlic with water until heated through, mashing slightly and adding salt to taste.
  3. Warm the tortilla and layer with black bean mixture, avocado, marinated kale, red onion, and feta.
  4. Roll the burrito and serve with sour cream or yogurt on the side if desired.
