Ingredients

The shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil

The rice bowls

  • 4 cups cooked rice
  • 1 large avocado, sliced
  • 1 large tomato, chopped
  • ½ cup edamame
  • ½ cup baby spinach

For garnish

  • 1 lime fresh lime juice
  • to taste fresh cilantro
  • to taste spicy mayo

Instructions

  1. 1. Pat dry the shrimp and season with salt, pepper, Italian seasoning, and garlic powder.
  2. 2. Heat olive oil in a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and curled.
  3. 3. Remove the shrimp from the skillet.
  4. 4. In serving bowls, layer the rice, then top with shrimp, avocado, tomatoes, edamame, and spinach.
  5. 5. Finish with lime juice, cilantro, and spicy mayo.
