Instructions
- 1. Pat dry the shrimp and season with salt, pepper, Italian seasoning, and garlic powder.
- 2. Heat olive oil in a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and curled.
- 3. Remove the shrimp from the skillet.
- 4. In serving bowls, layer the rice, then top with shrimp, avocado, tomatoes, edamame, and spinach.
- 5. Finish with lime juice, cilantro, and spicy mayo.
