The filling

unsweetened coconut butter

peppermint extract
Instructions
- Warm the coconut butter until soft enough to stir.
- Scoop ⅓ cup of coconut butter into a bowl and add peppermint extract to taste.
- Shape the filling into small disks and chill in the freezer.
- Melt the chocolate using a double boiler or microwave.
- Spoon melted chocolate into the bottoms of the molds.
- Place the chilled filling disks into the molds and cover with more melted chocolate.
- Tap the molds to ensure the chocolate covers the filling completely.
- Freeze or refrigerate until hardened, then remove from molds and serve.
