Ingredients

The chocolate

  • 9 ounces semi-sweet chocolate chips
  • ½ tsp coconut oil (optional)

The filling

  • cup unsweetened coconut butter
  • to taste peppermint extract

Instructions

  1. Warm the coconut butter until soft enough to stir.
  2. Scoop ⅓ cup of coconut butter into a bowl and add peppermint extract to taste.
  3. Shape the filling into small disks and chill in the freezer.
  4. Melt the chocolate using a double boiler or microwave.
  5. Spoon melted chocolate into the bottoms of the molds.
  6. Place the chilled filling disks into the molds and cover with more melted chocolate.
  7. Tap the molds to ensure the chocolate covers the filling completely.
  8. Freeze or refrigerate until hardened, then remove from molds and serve.
