Dark Chocolate Coconut Butter Cups

Ingredients

Coconut Butter

  • 1 cup Coconut Butter
  • to taste Stevia or maple syrup (optional)

Chocolate

  • 1 ¼ cups finely chopped food-grade cocoa butter
  • 2 Tbsp coconut oil
  • 2 Tbsp maple syrup
  • 1 cup cacao or unsweetened cocoa powder
  • 1 pinch sea salt (optional)
  • ½ tsp vanilla extract (optional)

Instructions

  1. Prepare the coconut butter and set aside.
  2. Create a double boiler with a saucepan and a mixing bowl on top.
  3. Melt the cocoa butter and coconut oil in the mixing bowl, stirring occasionally.
  4. Once melted, remove from heat and add maple syrup, then sift in the cocoa powder and mix until smooth.
  5. Chill the chocolate mixture in the refrigerator for 15-20 minutes until thickened.
  6. Line a muffin tin with paper liners and add 2 Tbsp of chocolate to each liner, coating the sides.
  7. Chill for 10 minutes until the chocolate is firmer.
  8. Add 1 ½ Tbsp of coconut butter to each cup and chill again for 10 minutes.
  9. Cover the coconut butter with the remaining chocolate and chill until firm.
  10. Enjoy chilled or let sit at room temperature for a softer texture.
