Dark Chocolate Coconut Butter Cups

Instructions
- Prepare the coconut butter and set aside.
- Create a double boiler with a saucepan and a mixing bowl on top.
- Melt the cocoa butter and coconut oil in the mixing bowl, stirring occasionally.
- Once melted, remove from heat and add maple syrup, then sift in the cocoa powder and mix until smooth.
- Chill the chocolate mixture in the refrigerator for 15-20 minutes until thickened.
- Line a muffin tin with paper liners and add 2 Tbsp of chocolate to each liner, coating the sides.
- Chill for 10 minutes until the chocolate is firmer.
- Add 1 ½ Tbsp of coconut butter to each cup and chill again for 10 minutes.
- Cover the coconut butter with the remaining chocolate and chill until firm.
- Enjoy chilled or let sit at room temperature for a softer texture.
