Almond Butter Cups

Ingredients

The chocolate mixture

  • ¾ cup melted coconut oil
  • ½ cup cocoa powder
  • 2–4 tablespoons natural sweetener (agave or maple syrup)
  • a pinch salt

The filling

  • ¾ cup almond butter (or any nut butter)
  • to taste sea salt for topping

Instructions

  1. Whisk together melted coconut oil, cocoa powder, sweetener, and a pinch of salt.
  2. Line a muffin tin with paper liners and pour 1-2 tablespoons of the cocoa mixture into each liner.
  3. Add a small spoonful (2-3 teaspoons) of almond butter into the center of each cup.
  4. Distribute the remaining chocolate mixture over the almond butter, smoothing the tops if needed.
  5. Sprinkle a pinch of coarse sea salt on top of each cup.
  6. Freeze for one hour or until solid.
